			<content:encoded><![CDATA[<p>Larger (souzhong) leaves are taken from the lower parts of the tea bush and after fermentation<br />
they are roasted on a hot iron plate. The tea is then smoked on bamboo racks over a fire made of<br />
green pine logs rich in resin. Souchongs can be smoked to different degrees, and this is a<br />
moderately smoked example. Souchong is a classic tea with a dedicated following.</p>
