Pomelo flower tea is a cultural tea offering by the indigenous Hakka tribe in Taiwan. This method of tea making is truly special, and has been perfected through time. During the month of March every year, the pomelo season arrive where the pomelo flowers blossom to their fullest. Blossoms are harvested before noon to avoid any excess moistures like dew, before being packed with tea leaves at 1:1 ratio in a approximately 75oC environment for complete scenting process to commence. Traditionally, pomelo teas are tea leaves packed inside a fresh hollowed pomelo trunks followed by 9 cycles of heating with steam and hot air, making it a very incredible hard-pressed tea, which can be aged for years. Pomelo flower tea together with chrysanthemum, jasmine and osmanthus, form four of the most influential flowers in the scented flower tea category. What makes pomelo flower tea a little different, is that each flower stamen, pistil and ovary is removed by hand first before scenting, leaving only petals, resulting in a cup with refreshing rich body sweet and floral liquor of elegance.

Oolong has a wide range of fermentation between 25% and 70%. This Oolong manifests a fermentation of around 40%. This Taiwanese Oolong is based on the traditional specialty of the province of Gangxi in the south of China. Small-leafed Oolong tea leaves are mixed with fresh Osmanthus blossoms from Northern Taiwan’s perfect climate and landscape. Harvested early in the morning between 4 and 7am to reflect the best aromatic qualities for the scenting process before dried together with Oolong. Well-known for its relaxation and digestive properties, this yellow infusion has a mild, fruity flavour reminiscent of caramel. Osmanthus blossoms are amongst the three most celebrated blossoms in the East, alongside Jasmine and Chrysanthemum flowers. Due to the semi-fermented category of this fine oolong, it can last as much as 5 consecutive infusions, with the first few infusions representing grassy green tea followed by the last few infusions representing woody black tea… All while embraced in elegant blooming fragrance.
