Butterfly pea flowers are commonly found in South East Asia. Interestingly referred to as ‘Blue tea’ or ‘Asian pigeon wings’, and ‘nam dok anchan’ in Thai, it is well-known for its beautiful bright blue colour. Due to its sensitivity to acidity such as lemon juice, it is used in cocktails and special tea blends.
